I went there alone and had a very nice experience. I went in without reservation. When you enter you get a fun greeting amd they ask for food allergies. The food was really good, my favorite were the Takoyaki. I liked them so much i ordered them again :) The Ramen was nicely balanced. The sashimi was alright. The pieces were on the smaller side but they tasted great. They also offer vegan dishes. The service was really nice and i felt welcomed and well taken care of, from fast service to asking if everything is alright, the staff did an amazing job! The Ambiente was really nice. They play music, which is not too loud or too quiet. You can have conversations at a regular volume and enjoy the music. The pricing was a little high, especially for the sashimi but it isn't too bad. To be fair i spent a lot because i ate a lot. You also get a service fee of 10% but the tip goes to the staff so it's fine in my book.

Overview
Maki & Ramen on Byres Road (130–132) is the brand’s West End Glasgow site — Japanese ramen and sushi from founder Teddy Lee’s Edinburgh-born chain, opened here in early 2025 as the group’s third Glasgow restaurant and first franchise, in the former Esushi unit. Noodles are handcrafted and tonkotsu broth is simmered for about eight hours at the Edinburgh kitchen. The Byres Road room is walk-in friendly (the brand FAQ lists advance booking for other branches, not this one). Hours on the venue page are noon–10pm daily. Expect signature tonkotsu and vegan tonkotsu, spicy hell and tantan bowls, katsu curries, yakisoba, and a full sushi roll and nigiri list. The menu flags vegetarian, vegan and majority-halal dishes, with gluten-free rice noodles on request (cross-contamination warning for coeliac). Hillhead subway is about a 30-second walk; buses run along Byres Road. Sister Glasgow sites sit on Bath Street and Renfield Street. Brand awards cited on the site include Deliveroo’s Scotland’s Best Japanese Restaurant (2024 and 2026) and Best Asian Food at the 2025 British QSR Franchise Awards.

We love Maki and Ramen! Great place to go for lunch or dinner, especially on birthdays! Amazing lunch deal but only in selected locations. Only £15 for a selected main and side. Lovely service, great atmosphere and yummy food 😋
Read on Google MapsAbsolutely loved it here!!!!! The food was incredible and Charlotte was amazing. Couldn’t fault anything and I’ve been to loads of sushi restaurants. I’ll definitely be back.
