Chop Grill & Bar sits on the corner of West George Street and Holland Street inside the Sandman Signature Glasgow Hotel (Pegasus House), a short walk from the King's Theatre. It is the Glasgow branch of the Canadian Chop steakhouse brand — Aberdeen came first — and opened to the public on 20 October 2023. The pitch is classic Canadian hospitality with Scottish produce: Donald Russell steaks cooked on a high-heat Montague broiler, plus burgers, smoked ribs and a full bar, with sports on multiple screens in the bar area. The space splits into an industrial-chic bar (cocktails, beer, wine; a Margarita machine was part of the launch fit-out), a quieter restaurant with booths and floor-to-ceiling windows, and private dining rooms named Gallus and Bonnie (OpenTable lists capacity up to about 30 for private parties). Executive chef William (Will) Gajda leads the kitchen. OpenTable prices mains and steaks roughly in the £26–£40 bracket; individual steaks on the listed menu run from about £35 for sirloin to £44 for fillet or smoked ribeye, with shared carvery options for groups. Official hours are daily noon–11pm. Walk-ins are welcome and tables can be booked online (OpenTable) or by phone on 0141 406 1860. Review themes praise steaks cooked as ordered, friendly service and the handy pre-theatre location; a minority flag slow service or an energetic sports-bar feel when screens are on. OpenTable also flags vegan and gluten-free options, dog-friendly access and wheelchair access. Charing Cross railway station is about a 4–6 minute walk; Cowcaddens Subway is roughly 700m (around 10–11 minutes on foot). Street parking is listed; the hotel sits just off the M8.
Absolutely amazing relaxing place, will definitely recommend steak was 10/10 garlic butter and the peppercorn sauce was amazing. Garlic prawns for starters was also 10/10 and the gin and elderflower cheesecake was amazing. Staff were so attentive, such a relaxed feeling. Will definitely be back.

The medium-cooked rib eye steak was a highlight—buttery, tender, and perfectly cooked. The Caesar salad was fresh and flavorful, complementing the meal beautifully. Highly recommend for a quality dining experience!

This was by far the best steak we have had since....and we have tried several. What a wee hidden gem. I would highly recommend. They do need to update their website though....the Pre-Theatre is different on the website to what they have in the restaurant. In terms of service...we had Jamie welcome us at the door, he was first to accommodate and let us have the original menu option that is on the website...a very cheery chappy. Then their was Stephen who took out order and had a bit of banter. Francis was great ...happy and helpful. All in all....it was awesome.
Read on Google MapsWhen the steak doesn't need sauce then you know you have found the perfect place to eat. The steak was cooked perfectly and would definitely recomend this restaurant to anyone who wants good food, great service in a relaxed atmosphere.
Read on Google MapsFrom the second I walked in staff were friendly and approachable, I was offered a table or booth, booth obviously, and presented with an extensive drinks menu. Beers and cocktails were immensely brought to our table. The food menu again was as extensive, the variety of as excellent but I chose the chop burger and wasn’t disappointed. It’s a little bit out the way but worth it!!
